If you read the “Folks of Noke” section in the newspaper you will get the results of a poll that asked about the best kind of pie to eat during Thanksgiving. Apple pie was the clear winner, but I decided that getting the win was already enough of a prize for apple pie lovers. So, today I will present a recipe for the loser of the poll: cherry pie!

Cherries are the main ingredient. Frozen is always an option and won’t affect the taste too much, although there is always something special about fresh fruit. Unfortunately, one reason why cherry pie might not have won the poll could be because the prime cherry-picking season is not during winter but in spring/summer! The best months to get fresh cherries are May to June. So, we may have to conform to the frozen ones.

We will also need sugar; I don’t recommend getting maraschino cherries if you don’t want your pie to be overly sweet! Cornstarch to help things bind together and some vanilla extract for a deeper flavor and you are all set for your filling. We just need to heat up and mix all the filling ingredients in a pot.

For convenience and to save money we can use a pre-made pie crust, and to make it extra flaky, small pieces of cold butter can be sprinkled on it before adding the cherry mixture. Then add the filling and cover with more pie crust. I recommend fun leaf designs for the top to get into the Thanksgiving spirit. Then it goes into the oven until golden brown (about 1 to 1 and ½ hours at 375 degrees Fahrenheit)!
