Easy Microwaveable Pumpkin Pie

With fall upon us, I know many people, myself included, are excited for the main event of the season; the pumpkin. From pumpkin pie, to pumpkin spice, the flavor is everywhere this time of year, and for a great reason. Pumpkins are super versatile, and can be used to make a variety of snacks, meals, and desserts. However, for many of our aspiring pumpkin chefs living on campus, the kitchen situation within your dorm may be less than ideal. So here is a fun recipe from Gemma Stafford of Bigger Bolder Baking that is a twist on the microwave baking staple; the mug cake.

This microwaveable pumpkin pie in a mug is super simple, fast, and fun to make. It can be made in either a small portion for a quick treat, or easily adapted to serve some friends! For this recipe, you’re going to want to start with 2 small cookies of your choice, though I personally recommend gingersnap cookies. Crumble the cookies and press the crumbs on the bottom of your microwave safe mug. If you’re having trouble getting them to stick, try adding the tiniest bit of melted butter. Next, make a pumpkin pie filling out of ⅓ cup of pumpkin puree (easily found at grocery stores this time of year), 1 egg, 1 tablespoon of milk (whole milk is my personal preference for baking, but use whatever you have on hand), 2 tablespoons of brown sugar, ½ teaspoon of vanilla, and 1 teaspoon pumpkin pie spice. Add salt to taste, and combine these ingredients till they combine with no lumps. 

Afterwards, just pour your pie mixture into your mug overtop of the cookie crumble base, being careful not to let it combine with the base. Microwave for 1 ½ to 2 minutes depending on your microwave, and remember that even after 2 minutes the top may look underdone; this is fine and typical of pies. Since your mug will be hot, remove it with caution and let your pie stand for a couple minutes to set and cool. I found that 2 minutes was a perfect time for the pie to set up. Serve it warm with whipped cream, or put it in the fridge for up to 24 hours.
