Easy Halloween Recipes That Anyone Can Enjoy

Halloween is a favorite holiday of the students at Roanoke College. This year, our students will be getting together for Halloween to celebrate, but no Halloween party is complete without some fun and spooky snacks! Here are a few of my favorite healthy and sweet Halloween treats:

Roasted Pumpkin Seeds

Roasted pumpkin seeds are a favorite snack of mine this time of year. After carving a pumpkin, I collect the seeds in a bowl and clean them. This is my favorite recipe to use, from www.allrecipes.com.

For this recipe, here are the ingredients you will need:

  • 1-2 cups of raw pumpkin seeds

Directions:

  1. Preheat oven to 300° F.
  2. Mix seeds in a bowl with salt and butter until they are evenly coated.
  3. Spread seeds evenly onto a baking sheet and bake 

Peanut Butter Apple Lanterns

Peanut butter with apples is a great and healthy combination. Turning something healthy into a cute snack could be perfect for any guest list. This is a vegan Halloween recipe that I love from www.veganyackattack.com.

For this recipe, here are the ingredients you will need:

  • 8-10 apples
  • ¼ cup of raisins
  • ¼ cup of creamy peanut butter
  • 2 teaspoons of maple syrup
  • ½ teaspoon of cinnamon

Directions:

  1. Cut the top ¼ of the apples off and scoop out the inside, like you would a pumpkin. Make sure there are no holes.
  2. Use a small knife to make jack-o-lantern faces on the surface of the apples, only cutting through the skin.
  3. Mix the raisins, peanut butter, maple syrup, and cinnamon together and divide evenly between the apples. After filling, add the tops back to each apple. 

Caramel Apples

My all-time favorite treat is the caramel apple! Halloween is the best time to make them too! Here is my preferred easy caramel apple recipe from www.allrecipes.com!

For this recipe, here are the ingredients you will need:

  • 6 apples
  • 1 (14 oz.) package of individually wrapped caramels
  • 2 tablespoons of milk
  • Craft sticks

Directions:

  1. Remove the stem from each apple and push a craft stick into the top of each.
  2. Place milk and caramel into a bowl and microwave for 2 minutes, stirring once. Allow to cool for a moment.
  3. Take each apple and roll it in the caramel until it is coated. The apples can be placed on a buttered or non-stick backing sheet for the caramel to set.

To make the apples look more festive, feel free to add ribbons to the craft sticks for decoration. Cupcake paper can also be used to place the apples inside. This will help to decrease the mess created by the caramel.
