Luckily, there is an abundance of delicious and healthy snacks that involve ingredients that may already be found in your kitchen and lend well to bulk buying. Next time you\u2019re feeling peckish, consider one of the following recipes:<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><b>Oven Chicken Fingers<\/b><\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><em><span style=\"font-weight: 400;\">As appearing in Fix-It and Enjoy- It! Healthy Cookbook by Phyllis Pellman Good, submitted by Barb Harvey.<\/span><\/em><\/p>\n<p><span style=\"font-weight: 400;\">1 C Italian bead crumbs\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 Tbsp grated Parmesan cheese\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 garlic clove, minced\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 Tbsp vegetable oil\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">6 boneless skinless chicken breast halves<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">In a plastic bag, mix bread crumbs and cheese.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">In a small bowl, combine garlic and oil. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Flatten chicken to \u00bd\u201d thickness and cut into 1\u201d wide strips.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Dip each strip in garlic oil.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Coat each with crumb mixture. Healthy Cookbook by Phyllis Pellman Good,<\/span> <span style=\"font-weight: 400;\">submitted by<\/span> <span style=\"font-weight: 400;\">Maryann Markano.<\/span><\/em><\/p>\n<p><span style=\"font-weight: 400;\">1 eggplant\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd tsp dried oregano\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bc tsp dried basil\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd tsp garlic powder\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 Tbsp olive oil\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\/8 tsp black pepper\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bc Cup pizza sauce\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd Cup shredded mozzarella cheese\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 Tomato, cut in 4 slices<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">Preheat oven to 425 degrees<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Peel eggplant and cut into 4 1\/2\u201d thick slices <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Combine spices and set aside <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Brush both sides of eggplant with oil and season with pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Arrange on baking sheet and baked until browned, about 8 minutes. Turn once during baking to brown both sides.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Place tomato slice and whatever vegetable toppings you want on each eggplant slice and sprinkle with spice mixture. Drizzle each slice with 1 Tbsp pizza sauce <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Top with cheese and bake until cheese melts, about 3-5 minutes\u00a0 <\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><b>Berry Nougat Crunch<\/b><\/span><\/p>\n<p><em><span style=\"font-weight: 400;\">As appearing in Fix-It and Enjoy- It! Healthy Cookbook by Phyllis Pellman Good, submitted by Anita King.<\/span><\/em><\/p>\n<p><span style=\"font-weight: 400;\">5 Cups berries, fresh or frozen\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00be Cups chopped almonds\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd Cup raisins\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bc Cup almond butter, softened (*can replace with other nut butters)\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 Tbsp maple syrup, or honey<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">Spoon your choice of berries into large mixing bowl.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Fold in nuts and raisins.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">In a small mixing bowl, stir almond butter and maple syrup together until well blended. Add turkey. Season with <\/span><span style=\"font-weight: 400;\">cumin, garlic powder, salt and pepper and saut\u00e9 until cooked through, breaking up meat into small pieces with a wooden spoon.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">When cooked, add bean dip and mix well.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Spoon the turkey mixture over the chips and sprinkle the cheese on top.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Bake until cheese melts, about 6 minutes.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Remove the nachos from the oven, top with pico de gallo, sour cream, cilantro and jalepe\u00f1os.<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><a href=\"https:\/\/fooddoodles.com\/frosty-no-bake-granola-bars\/\"><b>Banana Granola Bars<\/b><\/a><\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 large overripe bananas (240 grams total, without peel)<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\u202fcup\u202f(92 grams) rolled oats (Use GF oats, if needed)<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\/2 cup\u202fcrunchy cereal granola or nuts<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tbsp\u202fpure maple syrup\u202for any other sweetener you use, if using a granulated sweetener add 2 tbsp liquid such as almond milk<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2\u202ftbsp\u202f(28 grams) natural peanut butter or other nut or seed butter<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2\u202ftbsp\u202fsemi-sweet chocolate chips (make sure to use vegan, if desired)<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2\u202f tbsp\u202fdried cranberries or other dried fruit<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 &#8211; 4\u202ftsp\u202funsweetened cocoa powder<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">Line a muffin pan with paper liners, or use a silicone muffin pan for easy removal.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Mash the bananas. Add wet ingredients and cocoa powder and mix well. Add all other ingredients, mix well then press into prepared muffin tin.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Freeze at least 60 minutes before enjoying. We like keeping them in the freezer for easy snacks. In the past we&#8217;ve used a homemade cereal that stays crunchy but more often than not I&#8217;ll use homemade granola or even an equal amount of nuts but use whatever you have. I&#8217;ve even used toasted buckwheat before and it works really well and stays crunchy.<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Other popular healthy and homemade snacks at the moment include zucchini\/banana bread, chips, and homemade salsa or guacamole, and hummus. For a sweet snack or dessert, consider softening apples and sprinkling with cinnamon. The possibilities are endless and now is a great time to find the healthy and delicious snack that you love. And remember to cut yourself some slack in this stressful time.
