I think it\u2019s safe to say we all have that fond memory of carving pumpkins as a child, and, when we stuck our hands into them to get that goop out, we\u2019d all squeal and squish it between our fingers. Very satisfying, but oh-so disgusting.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Every year, the pumpkin goop became nothing more than an obstacle when carving, but there\u2019s a lot of cool ways you can use pumpkin goop and pumpkin seeds in recipes. It\u2019s a cool way to eliminate waste, if you\u2019re concerned about that sort of thing, and they\u2019re wicked festive.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Good luck with baking! Thanks Nana!)<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><strong>Roasted Pumpkin Seeds<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">pumpkin seeds from 1 pumpkin\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 Tbsp. butter\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc tsp. salt<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Preheat oven to 300 degrees.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Clean seeds in a bowl of warm water, removing the pumpkin \u2018strings\u2019 as much\u00a0<\/span><span style=\"font-weight: 400;\">as possible. Spread on a dry towel. Cover with a 2<\/span><span style=\"font-weight: 400;\">nd<\/span><span style=\"font-weight: 400;\"> dry towel and press the seeds until they are dry. Toss in a bowl with butter and salt. Spread on a cookie sheet (with sides).\u00a0 Bake for 40 minutes or until golden brown.\u00a0<\/span><\/p>\n<p><strong>Pumpkin Muffins<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Servings: 12<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 \u00bd cups (212g) of all-purpose flour\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tsp. baking powder\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd tsp. baking soda\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00be tsp. salt\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 \u00bd tsp. ground cinnamon\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd tsp. ground nutmeg\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc tsp. ground ginger\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 \u00bc cups (255g) granulated sugar\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup (120ml) vegetable oil\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 cup (244g) canned pumpkin (244g of fresh pumpkin goop)\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 eggs<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc cup apple juice or water<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Preheat oven to 350 degrees. Spray muffin tins with Pam.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a large bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a separate mixing bowl whisk together sugar, oil, pumpkin, eggs, and apple juice until blended well.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pour pumpkin mixture into flour mixture and fold with a rubber spatula just until combined.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Fill prepared muffin cups evenly, filling each nearly full.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Bake in preheated oven until toothpick inserted into the center comes out clean, about 20 &#8211; 25 minutes.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Let cool in muffin pan several minutes then transfer to a wire rack to cool completely.
